For your Thanksgiving leftovers, there’s always the Black Friday turkey sandwich option. But if you’re looking for ways to spice up your post-Turkey Day meal plans, look no further.

“Of course, there’s nothing better than enjoying that Thanksgiving meal all over again — those flavors are special,” James Beard Award-nominated chef Jerome Grant tells USA TODAY. “But getting creative with leftovers is a great way to extend the holiday spirit without feeling like you’re eating the same thing every day. It’s fun, it reduces waste and it’s a chance to put a new twist on these classics.”

Again, there’s no shame in just eating Thanksgiving leftovers as is the next day. But Grant and Washington, DC-based nutritionist Caroline Thomason, RD, CDCES, offers plenty of ideas to make the same foods feel like new again. Turkey is “as versatile as a lean protein,” says Thomason, making it the perfect centerpiece for countless recipes, including the following:

Turkey and vegetable soup or stew: Add remaining vegetables and herbs to a pot with broth. Or if you’re feeling ambitious, save the turkey carcass and simmer it to make stock from scratch.

How long does leftover turkey last in the fridge?

According to Carothers, your leftover turkey should be in the fridge or freezer within two hours, unless you’re using a buffet warming tray heated to at least 140°F. It should be stored in an airtight container and, if frozen, reheated to at least 165°F before eating, Thomason adds.
